Three customers in the shop at a time, and we're sanitising the team and shop throughout the day. We, Rod and Julie, extend a warm invitation to come and visit our Butchery. We create and sell fine primary cuts, specialty meat cuts and gourmet deli complements in store, since 1925.

Our passion for fine quality meat and friendly customer service has seen generations of Cairns families and people from all over and Far North Queensland return to our comfortably small butcher shop on Collins Ave Edge Hill to buy their beef, pork, lamb and poultry products at honest prices for over 75 years.

It all started with James Vallely Snr, grandfather of Brian Vallely and great grandfather of Danny and Ben Vallely. Seeing a rising number of people come to live in Redlynch and Kamerunga and few butchers to provide meat, James Snr and his family moved their family butcher shop from Mareeba to Redlynch in 1925.

This marbled beef is a decadent favourite, especially in Japan, with increasing popularity in Australia. We have Wagyu of various scores from both Rangers Valley Wagyu, Master Kobe, Robbins Island Wagyu and Black Onyx marbled beef.

So we keep shoving in as many rubs and sauce brands as we can fit, such as Lillie's Q, Hard Core Carnivore, Jess Pryle's Hardcore Carnivore rubs range, Ogilvie & Co's Tuckerbox marinades, chutneys and truffle range, and Olsson's Australia salts.
